What to do with that pile of food scraps after peeling vegetables? Composting, of course! It may seem a bit difficult in a cramped city apartment without a backyard, but it’s absolutely possible. There are a plethora of composting stations. Wendy Brawer, the founding-director of Green Maps, sets a good example: she and her husband put their food scraps in a lidded bin under the sink, and makes a weekly trip to the local community garden or Greenmarket to drop off what they’ve accumulated. If they don’t have time, then they store the bag in the freezer.
